Texas Chili (although, its not like most Texas Chili, that's just what its called)
Ingredients
4 pounds chili-ground beef (little coarser than hamburger)
1 large onion
2 cloves garlic
1 teaspoon ground oregano
1 teaspoon cumin seed
3 tablespoons chili powder
2 16-ounce cans stewed tomatoes (or 2 lbs fresh ripe tomatoes diced)
2 cups hot water
2 green bell peppers (chopped sort of fine)
3 large red (sweet bell pepper) (chopped sort of fine)
3 large yellow (sweet bell peppers) (chopped sort of fine)
2 or 3 jalapenos (depending on how hot you like it)
Salt (to taste)
Directions
Put the chili meat, onion, and garlic in large heavy broiler or skillet. Sear until light colored. Add the oregano, cumin, chili powder, tomatoes and hot water. Bring to a boil, lower the heat and simmer for one hour. As the fat cooks out, skim it off (as much as possible, not all of it). Add the peppers and salt, to taste, and cook for at least 15 more minutes (I usually cook for 30 to 45 more minutes).
This will make about 9 large bowls of chili. So if you have more people you might want to double or triple the recipe. This doesn't have much chili powder in it, so it won't have a strong chili flavor. Although it seems to have a ton of peppers in it, only the jalapenos are going to make it hot, so don't worry about the rest of them.
Serve with sliced cheddar cheese, crackers, and beer. Good luck.
